Sweet Potato & Caramelised Onion Salad

  • 150g goat’s cheese, or feta, omit for dairy-free 

For the dressing:

  • 1 tbsp more virgin olive oil
  • 1 tbsp crimson wine vinegar
  • 2 tsp wholegrain mustard
  • 2 tsp maple syrup
  • ¼ tsp floor cinnamon


Preheat the oven to 200°C or 395°F. Line a baking tray with baking paper. 

Spread the sweet potato items across the baking tray. Drizzle with 1 tbsp further virgin olive oil and 1 tsp sea salt.
